Jefferson County Recipe of the Day: Peanut Butter and Jelly Cookies

A new twist on a familiar classic!

Ingredients:

1/2 cup unsalted butter – softened
3/4 cup peanut butter
1/4 cup sugar
1/4 cup packed brown sugar
1 egg
1/2 tsp vanilla extract
1 1/2 cup flour
3/4 tsp baking soda
extra granulated sugar, for rolling dough
jam

Steps:

-Preheat the oven to 350 degrees.

-Cream the butter, peanut butter, and sugars together until light and fluffy. Add egg and vanilla extract and continue mixing until well combined.

-Whisk flour and soda together and then add to the wet ingredients.

-Chill the dough until firm.

-Form 1″ balls of dough and roll them in granulated sugar.

-Use your thumb to make an indent and slightly flatten the dough, and fill the well with some jam. Add another small piece of dough on top, to make it look more like a sandwich.

-Bake for 13 to 15 minutes.
