This recipe is actually my grandmothers. I grew up enjoying this delicious corn chowder many times when visiting grandma. However you look at it, this recipe is a winner for dinner anytime of the week!
INGREDIENTS
8-10 strips bacon
1 cup minced onion
1/2 cup chopped carrot
1/2 cup chopped celery
2 tbsp flour
4 cups chicken stock
3 cups diced potatoes
2 cans cream style corn
1 can evaporated milk
Salt and pepper to taste
INSTRUCTIONS
1) In a large pot cook the bacon. Once cooked, remove and chop.
2) To the pot, add the chopped bacon, minced onion, chopped carrot and celery. Saute everything together until fragrant (about 3 minutes).
3) Add the flour and mix together.
4) Add the chicken stock and diced potatoes. Stir everything together and simmer for about 5 minutes or until the potatoes, carrots and celery are tender.
5) Add the two can cans of cream style corn and the can of evaporated milk. Stir to incorporate.
6) Serve with cheesy bread for dipping and enjoy!
