Crumbs: Kimchi Rice

Kimchi Rice with Fried eggs on top | Abigail Spencer | Argonaut

Kimchi Fried Rice is a childhood staple for many people who grew up in Asian households, combining the sour-funky kimchi with leftover rice and salty Spam. It is easy to make and slightly addicting to eat. 

Ingredients: 

  • Butter to cook in 
  • ½ small onion, medium dice 
  • 1 cup chopped kimchi 
  • 2 tbs kimchi juice 
  • 1 can Spam, cut into cubes 
  • 2 cups leftover rice 
  • Soy sauce, to taste 
  • Sesame oil, to taste 
  • Garlic chili sauce, to taste 
  • 2 eggs 
  • Crumbled Seaweed, for garnish 
  1. Cook onions in butter until translucent and add kimchi. Cook on stovetop until most of kimchi juice comes to a boil, about 3 minutes. 
  1. Add Spam and cook until juices dry up. Break up rice and add to pan. 
  1. Once rice is hot, add soy sauce, garlic chili sauce and sesame oil. Stir and place on plate. 
  1. Fry eggs in pan to desired doneness and place over rice. Top with crumbled seaweed. 
  1. Enjoy!
