Eggplant and Bell Pepper Caponata [Vegan]
1/2 cup olive oil (you might not need it all) 1/2 cup diced tomatoes (fresh or canned) 1/4 cup golden raisins (optional) Heat about 1/2 of the olive oil (to start) in a large pot. Add your eggplant and onion. Cook for about 10 minutes uncovered. You want your eggplant to release the moisture and begin to brown. Stir as needed.
