White Truffle Vanilla Mac and Cheese [Vegan]
2 tablespoons corn starch (mix with 1/4 cup of water, make sure it’s well combined) Preheat your oven to 400°F. Cook pasta or noodles of choice as per package instructions. Be sure to generously salt water before adding pasta to pot. Just before it’s ready to strain add in your asparagus and cook till al dente.

Morning Cleanse Smoothie [Vegan]
1 cup pineapple chunks (fresh or frozen) 1 banana (fresh or frozen) 1 cup water (filtered or spring) 1/4 teaspoon turmeric powder + 1-2 peppercorns optional. Wash and prep all ingredients. Place everything in a high speed blender and blend until smooth. Enjoy!

Green Avocado Lime Smoothie [Vegan]
1 small avocado (about 1/4 cup) 1 tablespoon hemp hearts (optional) 2 tablespoons lime juice (1 large lime) Add all the ingredients to a high-speed blender. Blend until smooth and creamy. Enjoy!

Eggplant and Bell Pepper Caponata [Vegan]
1/2 cup olive oil (you might not need it all) 1/2 cup diced tomatoes (fresh or canned) 1/4 cup golden raisins (optional) Heat about 1/2 of the olive oil (to start) in a large pot. Add your eggplant and onion. Cook for about 10 minutes uncovered. You want your eggplant to release the moisture and begin to brown. Stir as needed.
