How to Make the Best Apple Custard Pie?


This is my ideal apple custard pie! The combination of ingredients is so good and right that you will be surprised by the delicious taste and smell this apple custard pie has. You will need around an hour and a half to make it and serve. Here is the recipe:

Ingredients:

  • 1 cup flour
  • 2 tablespoons sugar + 1/4 cup
  • A pinch of salt
  • 1/3 cup lard
  • 2 tablespoons butter
  • 2 tablespoons ice water
  • 1 cup brown sugar
  • 1/2 teaspoon plus 1/4 teaspoon ground cinnamon
  • 2 pounds peeled, cored and sliced Granny Smith apples
  • 1 egg yolk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • To garnish: 1 cup whipped cream, sweetened (optional)

 

Instructions:

  • Preheat the oven to 350°F/180°C/Gas Mark 4. In a large bowl, combine the flour, 2 tablespoons sugar, and salt.
  • Apply the lard and work it in with the hands until you get a mixture that looks like coarse crumbs. Pour the water, one tablespoon at a time. Use the dough to form a smooth ball. Wrap it in plastic wrap and place in the fridge for 30 minutes.
  • In a sauté pan, over medium-low heat, melt the butter. Add the brown sugar and cook for one minute. Place apples and 1/2 teaspoon cinnamon. Cook for 3 minutes. Then, remove from the heat and transfer in a deep dish 9-in. pie pan. Next, remove the dough from the fridge and apply on a lightly floured surface.
  • Roll it into a circle around 12 inches in diameter and 1/8-in. thick. Gently fold the dough circle in 1/2 and then in ½ again, in order to lift it without tearing it, and apply over the pie dish and crimp the pastry edges. Brush it with egg wash. Use a sharp knife to make a 1-in. circle in the center of the pie. Bake for 15 minutes.
  • In a mixing bowl, beat the heavy cream, the remaining 1/4 cup sugar, egg yolk, and vanilla extract. Spread the cream through the hole in the pie. Put it back in the oven and continue to cook for additional 30 minutes, or just until the custard is set. Remove and cool completely.
  • Before serving, sprinkle the top of the apple custard pie with some powdered sugar. Slice and serve with whipped cream, if desired.
