Roasted Beet, Sweet Potato, and Goat Cheese Power Salad

Mark's East Side Power Salad (WLUK)
Ingredients:

- 2 beets, peeled and cubed
- 1 sweet potato, peeled and cubed
- 2 Tbsp Olive oil
- Thyme, garlic powder, black pepper, salt
- 1 cup mixed greens (spinach, arugula, kale, etc)
- 4 oz. crumbled goat cheese
- 1-1/2 cups wild rice blend, cooked
- Pecans, chopped
- Balsamic reduction
Directions:
Preheat oven to 375 degrees.
Wash, peel, and cube the beets and sweet potatoes
In a bowl combine sweet potato, 1T. Olive oil, and seasonings. Put on baking sheet keeping to one side.
In same bowl combine beets with remaining oil and seasonings. Put on other side of baking sheet.
Bake 20 mins– burning halfway through.
In a large serving bowl , put down the rice blend. Surround it with the greens blend. Top with the sweet potato and beets. Sprinkle with the goat cheese, drizzle with balsamic, and finish with chopped pecans.
