Gluten-Free Spaghetti With Clams and Bacon Crumbs

Ingredients
For Double Batch (1 lb.) Gluten-Free Spaghetti
- 4
large eggs, beaten
Cold water
- 2 tsp.
olive oil
- 454 g
(16 oz) gluten-free flour blend, preferably Bob’s Red Mill 1 to 1 Baking Flour or King Arthur Measure for Measure Flour

slices bacon, finely chopped
- 1/4 c.
flat-leaf parsley, finely chopped
- 1/4 c.
fresh basil, finely chopped
- 2 tbsp.
unsalted butter
- 2
shallots, chopped
- 2
cloves garlic, chopped
- 2 tsp.
red pepper flakes
- 1 c.
dry white wine
- 3 lb.
(about 30) littleneck or Manila clams, scrubbed
Directions
Make Double Batch Gluten-Free Spaghetti
- Step 1Fit pasta maker with spaghetti or thin spaghetti disc.
- Step 2Place small measuring cup on digital scale; tare scale. Add eggs and then enough water to reach 227 grams (8 ounces) total weight. Stir in oil.
- Step 3Add gluten-free flour to mixing chamber; attach lid. Press Start to turn on pasta maker. Press Mode to select Double Batch. Press Start. Slowly pour egg mixture through liquid inlet into chamber.
- Step 4When pasta maker is done mixing, press Start to begin the extrusion process. Use flat cleaning tool to cut pasta to desired length.
Make Gluten-Free Spaghetti With Clams and Bacon Crumbs
- Step 1Bring large pot of water to a boil.
- Step 2 In small skillet on medium, cook bacon, stirring occasionally, until crisp, about 6 minutes. Transfer to paper towel–lined plate and let cool, then toss with parsley and basil.
- Step 3Melt butter in large skillet (with lid) on medium. Add shallots and sauté 1 minute. Stir in garlic and red pepper and cook 1 minute.
- Step 4Add wine and bring to a simmer. Add clams and cook, covered, until they open, 4 to 6 minutes.
- Step 5Meanwhile, add 1 tablespoon salt to boiling water, then pasta, and cook until just tender, 3 to 5 minutes. Toss clam mixture with cooked pasta and sprinkle with bacon crumbs.
GH Test Kitchen Tip: Fresh gluten-free pasta is particularly delicate, especially before the noodles are cooked. So instead of lifting spaghetti into boiling water with tongs, slide strands directly from your tray into the pot. This way you’ll avoid broken strands.
