What is a Cornish Pasty?

The Cornish pasty is the national meal of Cornwall, England. It is the perfect example of English comfort food and is an important part of the country’s culinary heritage. Traditionally, this turnover-shaped, baked shortcrust, savory pasty has flaky pastry pockets and is usually filled with a mixture of diced beef, potato, swede, onion, seasoning, and vegetables. While the authentic version of this recipe is not vegan, that doesn’t mean you can’t enjoy this famous delicacy. Anything can be veganized, and Cornish pasties are no exception. With a few tweaks to the recipe, you too can enjoy this pasty!

How to Make it Vegan

In order to make a plant-based version of the Cornish pasty, the first step is to eliminate the meat. As a substitute, you can either use soy meat, or diced mushrooms. Mushrooms are a popular option since they do a great job at creating a similar consistency as the meat. The only other part of the original recipe that needs to be altered is the shortcrust pastry, which traditionally contains butter. An easy alternative is dairy-free vegan butter, vegan shortening, or olive oil.
