Ingredients You Need for Dessert Apple Enchiladas [Vegan]

Apple Pie Filling:
  • 2 apples peeled, cored, and cut into pieces
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon arrowroot
  • 1 teaspoons cinnamon
  • 1/2 cup chopped pecans
  • 1/2 cup of water

For the Tortillas:

  • 4 eight-inch flour tortillas
  • 2 tablespoons unsalted butter melted
  • 3 tablespoons granulated sugar mixed with 1 ½ teaspoons cinnamon

For the Topping:

  • Caramel or syrup
  • 1/4 cup chopped pecans

How to Prepare Dessert Apple Enchiladas [Vegan]

  1. Peel the apples and slice in small pieces. Sprinkle the apple with lemon juice. Set aside
  2. Combine water and the arrowroot in a small saucepan. Whisk and add sugar and cinnamon. Put on low heat and add the sliced apples
  3. Simmer for 10 minutes on low to medium heat and stir occasionally until the apples fall apart. Take the pan off the heat to let the apples cool. Stir chopped pecans through the apple filling.
  4. Preheat oven to 350℉/175. Line a baking tray with baking paper
  5. Heat the butter, take a tortilla. Brush one side with the melted butter. Mix sugar with cinnamon and coat the butter side of the tortillas with this mixture
  6. Put the sugar-coated side of a tortilla and put on the baking tray. Take two tablespoons of apple pie filling and put on one end of a tortilla
  7. Roll the tortilla and roll from the end containing the apples. Put the tortilla, seam-side down, on the baking sheet. Repeat for remaining tortillas
  8. Put the baking tray in the oven to bake for 15 minutes. Take the apple enchiladas out of the oven and drizzle with caramel sauce or syrup
  9. Chop the pecans and sprinkle the apple enchiladas with the chopped pecans and serve.
