Apple, Cranberry, Pear, Pomegranate and Pecan Salad

Apple, Cranberry, Pear, Pomegranate and Pecan Salad (WLUK)
Ingredients:

* Serves 6-8 people
- 1 lb. cleaned baby spinach
- 1 granny smith apple sliced
- 1 honey crisp apple slices
- 1 pear sliced
- 1/2 cup of pomegranate
- 1/2 cup dried cranberries
- 1/2 cup dried blueberries
- 1/2 cup crumbled goat cheese
- 1/2 cup toasted pecans
Lemon Maple Poppy Seed Vinaigrette:
- Juice and zest from 2 lemons
- 1/4 cup real maple syrup
- 1 Tablespoon Poppy Seeds
- Pinch of salt and pepper
- 1/4 cup olive oil
Directions:
Place the spinach in nice bowl or platter and arrange the fruit, nuts and cheeses evenly on top

In another bowl, juice and zest lemons, add poppy seeds, maple syrup, salt and pepper. and whisk together. Slowly add the olive oil while whisking to incorporate. Drizzle on salad or serve on the side
