Creamed Corn Bread with Bacon and Scallion (WLUK)
Ingredients:

- 2 8.5 ounce boxes of jiffy corn bread
- 2 large eggs
- 1 14.75 ounce can of cream style corn
- 1 cup buttermilk
- 1/2 cup butter
- 1bunch green onions chopped
- 8 pieces of crispy bacon
- Save the bacon fat for greasing the pan
- Honey for drizzling over the top
Directions:
Pre heat oven to 425 degrees
In a large bowl, combine the cornbread mix, eggs, corn, buttermilk, butter, scallions and bacon.

Pour batter in to bacon greased baking pan and bake for 25 to 35 minutes until the bread pulls away from the edges. Drizzle with honey, best served warm.
