Ingredients You Need for Pecan Pie Bars [Vegan]

For the Base:
  • 1 cup almond flour
  • 3/4 cup oat flour
  • 1/8 teaspoon sea salt
  • 3 tablespoons coconut oil (melted)
  • 2 tablespoons maple syrup

For the Filling:

  • 1/2 cup coconut sugar
  • 2/3 cup brown rice syrup
  • 3 tablespoons vegan butter
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1 tablespoon arrowroot starch
  • 1 1/2 cups pecans

How to Prepare Pecan Pie Bars [Vegan]

  1. Preheat the oven to 350ºF and line a 8×8 square pan with parchment paper.
  2. Make the base first. Melt the coconut oil and measure out 3 tbsp. Then add all the base ingredients together and mix well. The batter will be crumbly but will stick together. Place the base batter in the lined 8×8 pan. Spread it evenly in the pan and press it down firmly with your fingers. Bake for 10 minutes. Remove it from the oven after 10 minutes (it will be slightly golden) and let it sit while you prepare the filling.
  3. Make the filling. Add all the ingredients (except the pecans) to a small saucepan. Over low heat let the butter melt and everything combine by stirring regularly. Once the butter and sugar have broken down, remove it from the heat. The filling should be somewhere between thick and a little runny. Add in the pecans and thoroughly mix everything together.
  4. Pour the filling over the base and spread it evenly. Use all the filling.
  5. Bake in the oven for 18-20 minutes until the filling is bubbling quite intensely. Remove from the oven and let cool for 20 minutes (at least) and then place in the fridge to set for at least 3 hours. If you remove it after 2 hours, the bars will have somewhat set but the middle will be a bit runnier than what would be ideal. So 3-hour minimum is ideal.
  6. After the bars have set cut them evenly and enjoy! Store bars in a container in the fridge.
