Ina Garten Ends Her Countdown to Thanksgiving on a Sweet Note (but Not With Pie)

It’s already been a treat to stalk Ina Garten’s Instagram for an entire week, ever since she announced that she’d be sharing her best make-ahead Thanksgiving recipes. First it was the pre-carved turkey and homemade gravy. Next, it was a drool-worthy mushroom-leek bread pudding complete with pancetta and melty Gruyère. Then, she outdid herself with a modernized classic, green beans gremolata. Needless to say, we’re sad to see the feast come to a close, but not too sad, considering she’s wrapping up with her recipe for pumpkin roulade.

“My Pumpkin Roulade with Ginger Buttercream is the perfect ending to your Thanksgiving dinner,” she writes in the caption. “It’s the classic flavors of the holiday but done in a delicious new way. The good news is, you can make it up to three days in advance and just leave it in the fridge. Your guests will be very happy!! Happy Thanksgiving everyone!!”

Now, we love pie as much as the next person, but we have to admit: It’s really nice to switch things up. This elegant cake has all the traditional flavors we crave at our Turkey Day celebration, but there’s no risk of a soggy crust or a cracked top. (Besides, you can’t really do better than ginger buttercream frosting.)

With Thanksgiving now three days away, you could technically make Garten’s roulade *right now* and check one item off your holiday list. We’re not saying that’s a challenge, but if you need the motivation…the Contessa just upped the ante.
