In early 2019, a fire ripped through the Los Mariachis restaurant in Boise. After 17 years at 6566 W. Fairview Ave on the Boise Bench, the restaurant ceased operation. Crews later came in and tore the building down, leaving just the foundation and pole sign left in place.
Los Mariachis was known for its menudo special, ladies night events, and for a time the “Mariachi Loco” who danced and waved to drivers out front of the restaurant on Fairview Ave.
But now, construction work is underway on the site in Boise once again. However, it doesn’t appear Los Mariachis will return.
Permit applications with the City of Boise indicate property owner Nguyen Huong is rebuilding the restaurant building on the old foundation. The building went up in 1986 for Rax, a national drive-thru restaurant chain, and later served several other concepts before Los Marichi’s opened in the early 2000s.
The permit application shows the building will have a few design changes, including more muted colors and elimination of a “bubble” on the front of the building. Otherwise, it will reflect the former restaurant on the site.
Boise commercial real estate firm TOK Commercial has the building listed for lease for a new restaurant concept.
Los Mariachis remains open with locations in Meridian and Caldwell.
