Cade Cunningham vegan sandwich returns to the menu at Corktown's Folk Detroit

Although Detroit Pistons rookie Cade Cunningham is out with an ankle sprain, he has teamed up again with the Just Egg brand for a new version of the plant-based Cade Stack breakfast sandwich.

The sandwich launched Wednesday. It’s a new take on the original Cade Stack vegan sandwich that launched in August. The second Cade Stack sandwich collaboration features a Just Egg Folded product along with curried vegan sausage, pickled red onion, apple chutney and cilantro, served on Zingerman's farm bread. It’s $11 and is available only at Folk Detroit in Corktown for the next three weeks.

“Most days, we sold out of the Cade Stack before the end of the day, and after the limited time offer ended there were a lot of requests from customers to see the sandwich return again,” said Rohani Foulkes, founder and owner of Folk Detroit.

Cunningham follows a plant-based diet and has been vegan since high school, according to a VegNews report. He recently teamed up with San Francisco-based Eat Just, as the brand ambassador for its Just Egg products.

With this second collaboration, Folk Detroit will donate a portion of the sandwich proceeds and a match from Just Egg to the Detroit Food Academy. As an option, you can add jams homemade by Detroit Food Academy students during the limited time offer.

Just Egg is a product that scrambles just like eggs and is touted to taste like them, too. There's also a folded egg product, like those on fast-food breakfast sandwiches. But the "eggs" are made entirely from plants — not chickens — so there’s zero cholesterol. And it's rich in protein.

The main ingredient in Just Egg products is protein-rich mung bean, according to the company’s website.  While mung beans have been around for thousands of years, Eat Just uses the legumes' gelatin properties as a thickener and emulsifier in making its products.
