Marshmallows were originally made from the root of the marshmallow plant.  However, these days, when you hear the word marshmallow, you probably think of that fluffy, white little candy pillow pushed onto the end of a stick being toasted over a campfire.  It might bring back memories of eating s’mores on camping trips or remind you of colder days to come all snuggled up with a cup of hot chocolate and baby marshmallows bobbing around on top.

Marshmallows today are usually made from sugar, eggs, and gelatin.  Not things that are suitable for a vegan diet.  However, like with most non-vegan foodstuffs out there, there are perfectly convincing plant-based versions of this childhood favorite treat on the market, not to mention recipes to make your own from scratch.

As fun as it is to have campfire marshmallow moments, there are lots of ways to have fun with marshmallows.  Check out these OPG recipes that celebrate the ooey-gooey marshmallow in all of its candy goodness.

Here we have a more sophisticated take on a childhood favorite—the rice crispy cake. Gabrielle St. Claire‘s White Chocolate Blueberry Marshmallow Treats are very easy to make and look amazing.  The rice cereal is mixed with melted vegan marshmallows and dried blueberries.  Then the treats are topped with white chocolate and even more blueberries for decoration. Yummy and fun.

This is a gorgeous cake that will delight guests on any occasion.  This Marshmallow Cream Cake by Emily von Euw isn’t really marshmallow at all.  Chia seeds are used here to emulate the light fluffiness of marshmallows.  There is a mint layer, a vanilla layer, and a pink layer made so by beets.  What’s more, it is gluten-free and raw.

These Easy Vanilla Marshmallow Shakes by Tori Cooper are made with just five ingredients in just five minutes flat.  They are creamy treats that include vegan ice cream, vegan whipped cream, vanilla, and of course a generous helping of mini marshmallows.  These could be a super fun party treat.

These Chocolate Marshmallow Muffins by Nicole Axworthy are a vegan take on a classic muffin.  They would make a great lunch box snack or a fun dessert.  They are rich and fluffy and dotted with chunks of chocolate and, of course, marshmallow gems.

It’s hard to go wrong with this recipe for Chocolate Chip, Cornflake, and Marshmallow Cookies by Bridge Rose.  You’ll get a crispy cookie with gooey marshmallows scattered through them.  A simple treat made with simple ingredients.

Interestingly, this recipe for Homemade Marshmallow Fluff by Aileen Metcalf calls for a tablespoon of marshmallow root from the plant we mentioned earlier.  This Marshmallow Fluff is a vegan version of the stuff you can find in jars in the peanut butter section of the supermarket.  Spread it on toast or use it to top lemon meringue pies.
