Ingredients
For muffins
- 2 c.
all-purpose flour
- 1/2 c.
- 1 1/2 tsp.
baking powder
- 1/2 tsp.
kosher salt
- 1 c.
whole milk
- 4 tbsp.
butter, melted and cooled
- 2
large eggs
- 2 tsp.
pure vanilla extract
- 1 c.
toasted pecans, chopped
For topping
- 1/2 c.
all-purpose flour
- 1/4 c.
packed Truvia Sweet Complete Brown with a hint of Molasses Sweetener
- 3 tbsp.
- 4 tbsp.
butter, melted
- 15
pecan halves
Directions
- Step 1Make muffins: Preheat oven to 350°. Line 2 standard muffin tins with paper liners. In a medium bowl, whisk together flour, sweetener, baking powder, and salt.
- Step 2In a large bowl, combine milk, melted butter, eggs, and vanilla. Add dry ingredients to wet mixture and stir until just combined. Fold in chopped pecans. Fill liners about ¾ full with batter.
- Step 3Make topping: In a medium bowl, combine flour, sweeteners, and melted butter. Sprinkle over muffins and top each with a pecan half.
- Step 4Bake until golden and a toothpick inserted in the middle comes out clean, 18 to 20 minutes. Let cool before serving.
