Everybody loves doughnuts, but this cinnamon-coffee-vanilla doughnut is in a league of its own. The tasty treat is baked instead of fried so this decadent treat is healthier than your normal doughnut. Plus, you can get creative and decorate these doughnuts with whatever you have lying around the kitchen after you apply the glaze.

Ingredients You Need for Cinnamon Doughnuts With Coffee and Vanilla Glaze [Vegan, Gluten-free]
For the Dry Ingredients:
- 2 cups gluten-free self-raising flour
- 1 1/4 cup fine caster sugar
- 1/4 teaspoon ginger, ground
- 1/4 teaspoon nutmeg, ground
- 1 teaspoon cinnamon, ground
- 2 teaspoons baking powder
For the Wet Ingredients:
- 1 1/4 cup unsweetened soy milk
- 1 vegan egg
- 1/4 cup vegan butter
- 2 teaspoons vanilla extract
For the Coffe Glaze:
- 1 cup powdered sugar
- 2 1/2 tablespoons coffee, brewed
- A pinch of espresso
For the Vanilla Glaze:
- 1 cup powdered sugar
- 1 teaspoon unsweetened soy milk
- 1 teaspoon vanilla extract
How to Prepare Cinnamon Doughnuts With Coffee and Vanilla Glaze [Vegan, Gluten-free]
To Make the Doughnuts:
- Preheat the oven to 350°F and grease your doughnut tins.
- In a large mixing bowl, mix together the dry ingredients.
- In a small saucepan, over a low heat, melt the butter until it's smooth.
- In a separate bowl, mix together the vegan egg, melted butter, soy milk, and vanilla extract until the mixture is smooth.
- Pour the wet mixture into the dry mixture and mix it until everything is fully combined.
- Add the doughnut mixture into a piping bag fitted with a round tip nozzle and pipe your dough into the tins until they are 3/4 full.
- Pop the trays into the preheated oven and allow them to bake for 15-18 minutes. You will know they are done when you put a knife or skewer in and it comes out clean.
- Place the doughnuts onto a cooling rack and cool fully before glazing.
To Make the Glazes:
- In a mixing bowl, combine the icing sugar and coffee until the mixture is smooth and shiny.
- Repeat this process to make the vanilla glaze but use the vanilla glaze ingredients.
- Dip the doughnuts into the glaze and place back onto a cooling rack. At, this is the time you can decorate your doughnuts with nuts, coconut curls, coffee beans, cacao nibs, or coffee powder.
- Pop them into the fridge 5 minutes.
