Quick Fix: Mashed Cauliflower can replace mashed potatoes

Mashed Cauliflower with Manzanilla Olives 

Steam: 

1 head cauliflower, cut into florets 

2 garlic cloves, peeled 

Stir: 

¼ cup chopped pimento-stuffed Manzanilla olives 

2 tablespoons butter 

Salt and pepper to taste 

Chopped chives 

Steam cauliflower and garlic in a steamer basket set over a pot of boiling water until softened, 8 to 10 minutes. 

Puree cauliflower mixture in a food processor, scraping down sides as needed; transfer to a bowl. 

Stir olives and butter into the cauliflower puree; season with salt and pepper, then top with chives.
