Peanut Butter Apple Crisp

Nothing says October like the wonderful variety of apples we have in abundance right now. Whether you eat them fresh off the tree at an orchard or out of the bags from your local grocery store or produce stand, they’re not only healthy, but also tasty and delicious.

They are just as flavorful when made into apple butter or apple sauce, or baked in pies or another family favorite, apple crisp. This recipe offers a twist on the traditional apple crisp by adding peanut butter to the “crisp” part.

After your Peanut Butter Apple Crisp cools, just add a few streaks of caramel ice cream topping as garnish and you’ll have a wonderful dessert in no time. To make it even better, serve it with a dollop of whipped cream and drizzle a little more caramel topping over it when served.

Serve it with a hot cup of apple cider for a special autumn treat your family and friends will love!

PEANUT BUTTER APPLE CRISP

1 cup all-purpose flour

1 1/2 cups brown sugar, packed

1 teaspoon cinnamon

3/4 cup creamy peanut butter

1/3 cup butter

6-8 tart apples, cored, peeled and thinly sliced

1 teaspoon lemon zest

2 tablespoons lemon juice

1/4 cup honey roasted peanuts, crushed

Caramel ice cream topping (optional)

Whipped cream or whipped topping (optional)

Combine flour and brown sugar in a medium bowl. Cut in peanut butter and butter until mixture resembles coarse crumbs; set aside.

Arrange apple slices in a lightly greased 13-by-9-inch baking dish or pan; sprinkle with lemon zest and lemon juice. Sprinkle cinnamon over all.

Top apples with crumb mixture and sprinkle crushed honey roasted peanuts over top. Bake at 350 degrees for 30-35 minutes.

When cool, drizzle streaks of caramel topping across top of crumb layer. If desired, put a dollop of whipped cream over each serving and drizzle a little more caramel ice cream topping over whipped topping. Serves 8-10.
