Kara Swanson with Life Well Lived shares her recipe for pumpkin power bites.
Makes 14 Bites
1/4 cup pumpkin
1 cup oats
1/4 cup peanut butter
1/2 tsp pumpkin pie spice
1 tsp cinnamon
2 tbsp maple syrup
2 tbsp shredded coconut
1/4 cup walnuts, chopped
1/2 cup mini chocolate chips
1 tbsp chia seeds
2 tbsp flaxseed meal
Mix all ingredients together in a food processor (or bowl). Use a cookie scoop to scoop into balls. Store in the fridge or freezer.
