Resorts World’s Starlight on 66 Rolls Out New Menu

High above the Las Vegas Strip, Resorts World’s Starlight on 66 serves guests small plates of elevated fare and refreshing cocktails along with a stunning Strip view from the 66th floor. Executive chef Chanthone Vang rolled out a new menu for guests looking to indulge in seasoned bites paired with rare spirits. Before heading over to this sweet spot for a nice evening out, here are a few must-try dishes to consider. Plus a couple of desserts worth saving room for after dinner. 

Bold Flavors in Every Bite

The Starlight on 66 is the perfect spot to catch up with friends and order shareable plates:

Oysters on Half Shell served with yuzu jelly, chive oil and seasoned with black garlic 

Or go for a classic comfort dish like the Shrimp Cocktail with a side of cocktail sauce, micro green mix and lemon vinaigrette. 


Other Seafood menu Highlights include:

Big Eye Tuna Tacos filled with taro roots, tobiko caviar, guacamole finished with soy and lime dressing.

Jumbo Lump Crab comes with caper butter sauce, salmon roe and chive oil.

Brown Butter Lobster Rolls are finished with garlic aioli, Old Bay seasoning and served on toasted brioche.

Indulge in the Golden Russian Osetra Caviar with blini, crème fraiche, red onion, egg yolks and whites and chives.


Your New Favorite Small Plates

Wishing it was still summer? The Blackened Watermelon dish with goat cheese cream, cucumber relish, red wine reduction and citrus will give you back the warm fuzzy feelings. 

Seasoned with spicy cherry peppers, butter pickles, watermelon radish and topped with maple syrup, the sweet and savory Crispy Chicken Bourbon is a mouth watering flavor bomb.

For the carnivorous taste buds, try the Beef Tartare prepared with black garlic, caper and dill dressing finished with truffle and pecorino chips; Wagyu Beef Sliders served with caramelized onions, fresh sliced tomato, aged cheddar and remoulade; and NY Strip, a 4 oz. prime angus beef steak presented on toasted sourdough covered with bleu cream cheese, smoked ham and roasted mushrooms.


Dig into Delicious Desserts

Cater to a sweet tooth after a fine meal by ordering one of their new delish desserts.

Yuzu Cheesecake drizzled with white chocolate, coconut lime, blackberry and raspberry coulis is rich in flavor.

Chocolate lovers must try a piece of the Chocolate Decadence, a devil’s food cake with creamy chocolate mousse, salted caramel plus crisp pearls and pretzel crunch. The sweet and salty combo is the perfect blend of both worlds. 


Cozy up with a Cocktail

To accompany a juicy steak or fresh oysters, there’s nothing like a good cocktail to amplify the bold flavors.

Order the Crockford’s Set for a smooth, casual sip. This signature cocktail is mixed with Beefeater 24 gin, Orange Lychee Jasmine Tonic syrup and Fever Tree club soda.

Not into gin? Perhaps a tequila based drink is more your style. Hibiscus Paloma is made with Don Julio Blanco, hibiscus syrup, grapefruit, lime and sparkling pink grapefruit.

The lounge also serves champagne and wine by the glass, bottled beers, wine bottles, bottle service and other refreshing handcrafted cocktails.
