Ingredients

  • ½ cup unseasoned pumpkin puree

  • ½ cup packed light brown sugar

  • ¼ cup unsweetened almond butter

  • 1 large egg

  • 1 teaspoon vanilla extract

  • ¾ cup oat flour

  • 1 ½ teaspoons ground cinnamon

  • ½ teaspoon baking soda

  • ¼ teaspoon baking powder

  • ¼ teaspoon salt

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground ginger

  • 1 ½ cups old-fashioned rolled oats

  • ½ cup raisins

Directions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Combine pumpkin, brown sugar, almond butter, egg and vanilla in a small bowl; set aside. Whisk oat flour, cinnamon, baking soda, baking powder, salt, nutmeg and ginger in a medium bowl. Stir the pumpkin mixture into the flour mixture. Fold in oats and raisins.

  2. Drop 10 heaping tablespoonfuls of dough about 1 inch apart on the prepared baking sheet. Slightly flatten, if desired. Bake until lightly browned, about 10 minutes. Let cool on the pan for 3 minutes before transferring to a wire rack to cool completely, about 20 minutes. Repeat with the remaining dough.

* Daily Values (DVs) are the recommended amounts of nutrients to consume each day. Percent Daily Value (%DV) found on nutrition labels tells you how much a serving of a particular food or recipe contributes to each of those total recommended amounts. Per the Food and Drug Administration (FDA), the daily value is based on a standard 2,000 calorie diet. Depending on your calorie needs or if you have a health condition, you may need more or less of particular nutrients. (For example, it’s recommended that people following a heart-healthy diet eat less sodium on a daily basis compared to those following a standard diet.)
