4 (1/2 inch slices) pork loin
1 cup flour
1/4 cup cornstarch
2 eggs, beaten
Salt & pepper
Canola oil
Heat canola oil to 350° in a large sauce pan. To prepare the pork place it in a thick Ziploc bag and pound with the meat tenderizer until it is flat. Dredge the pork tenderloin in flour first, then dip it in egg, then dredge back in the flour and lower into the oil. Cook in the oil until both sides are golden brown. Serve on a brioche bun with lettuce and tomato.
