Ingredients:

• 3 cups shredded medium cheddar cheese (hand shredded)
• 4 ounces cream cheese
• 1 clove garlic (or 1 tsp garlic powder)
• 2/3 cup beer, whisked a few minutes to flatten carbonation a bit
• 1 Tbsp Worcestershire sauce (or to taste)
• 1 Tbsp Stone ground or Dijon mustard
• 1 tsp hot sauce (or to taste)
• 1 tsp prepared horseradish
• 1 tsp sweet paprika (plus a little extra for sprinkling on top)
• 1/2 tsp black pepper
• 1 tsp sea salt (or to taste)
• 2 Tbsp finely cut fresh chives or green onions to sprinkle over dip

Directions:

1. In the bowl of a food processor add the shredded cheddar, cream cheese and roughly chopped garlic clove. Process until combined.
2. Add all the other ingredients except for the beer, salt and chives. Process and while processing slowly add the beer to get a creamy BUT not runny consistency (do not add it all if the dip is becoming runny).
3. Transfer to a mixing bowl and taste. Adjust seasonings as needed and add salt as needed..
4. Serve garnished with a pinch of paprika and chives and accompanied by crackers, crackers, bread sticks and/or veggie sticks.
