Pub Cheese

Ingredients:

- 3 cups shredded medium cheddar cheese (hand shredded)
- 4 ounces cream cheese
- 1 clove garlic (or 1 tsp garlic powder)
- 2/3 cup beer, whisked a few minutes to flatten carbonation a bit
- 1 Tbsp Worcestershire sauce (or to taste)
- 1 Tbsp Stone ground or Dijon mustard
- 1 tsp hot sauce (or to taste)
- 1 tsp prepared horseradish
- 1 tsp sweet paprika (plus a little extra for sprinkling on top)
- 1/2 tsp black pepper
- 1 tsp sea salt (or to taste)
- 2 Tbsp finely cut fresh chives or green onions to sprinkle over dip

- In the bowl of a food processor add the shredded cheddar, cream cheese and roughly chopped garlic clove. Process until combined.
- Add all the other ingredients except for the beer, salt and chives. Process and while processing slowly add the beer to get a creamy BUT not runny consistency (do not add it all if the dip is becoming runny).
- Transfer to a mixing bowl and taste. Adjust seasonings as needed and add salt as needed..
- Serve garnished with a pinch of paprika and chives and accompanied by crackers, crackers, bread sticks and/or veggie sticks.
