Here are the food service inspections reported by the Onondaga County Health Department from Aug. 29 to Sept. 4:

UNSATISFACTORY INSPECTIONS

Empire Buffet 98

3179 Erie Boulevard East, DeWitt, NY 13214

Inspection done 12:01 p.m. September 1, 2021

Reinspection is Required

Critical violations: Fruit flies found on uncovered flour (corrected - flour discarded).

Raw beef and pork medallions at 51 degrees on cold buffet line (corrected - put on ice to rapid cool).

Rice at 109 degrees in rice hot holding unit (corrected - discarded).

Violations: Food items throughout kitchen not stored covered/protected from pests. Cut onions, watermelon and other food items in walk-in cooler not covered. Two cardboard boxes being reused to store chicken in walk-in cooler (corrected chicken put into plastic bins).

Single service bowls being reused in bulk bins as scoops.

Large plastic bin of chicken improperly thawing in standing water on side of sink in kitchen (corrected - put under running water).

Tin can used as scoop in bulk food bin. Evidence of multiple cardboard boxes with heavy amount of grease being reused for direct holding of food products.

Shelves throughout kitchen lined with cardboard, not a smooth cleanable surface.

Sanitizing cloths not stored in solution between uses.

Interior of ice machine and ice shoots at soda machines have mold growth.

Hand wash sink in rear of kitchen not accessable, large mixer stored in front of it.

Doors on dumpsters not closed. Ground around dumpsters dirty, dumpsters appear to be leaking.

Mouse droppings found throught dry storage area and on lower shelving throughout kitchen. Fruit flies and house flies found throughout kitchen. Holes found in walls and rear door lacks weather stripping along bottom, allowing possible entrance of pests.

No pest control company has been on premise since establishment reopened over summer (appointment scheduled).

Fly strip placed over food prep station in kitchen.

Floors in walk-in freezer have deep pits, not smooth and easily cleanable. Some walls in food prep areas dirty.

Shrubs in front of entrance have large amount of trash debris.

Reinspection is Required

Critical violations: None

Violations: Reinspection (previous inspection done Aug. 6, 2021) reveals that the ground surrounding the two dumpsters has not been adequately cleaned up. Trash on ground and a small amount of soft garbage. One dumpster is leaking with leakage collecting in the driveway behind the building. Dumpsters are also being left open.
