Ingredients:
- 1 cup brown sugar
- 1 cup sugar
- 1 1/2 cups vegetable oil
- 3 eggs
- 2 1/4 teaspoons vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 5 apples, peeled, cored and cut in 1/2 inch dice
- 1 1/4 cups chopped pecans
Caramel Sauce:
- 1/2 stick of butter (4 tablespoons)
- 1/4 cup brown sugar
- 1/4 cup sugar
- Pinch of salt
- 1/2 cup Lamers Dairy Dairyland’s Best Heavy Whipping Cream
Directions:
Preheat oven to 325 degrees. Butter and flour a 9 x 13 pan.
Put the sugars and oil in a mixing bowl and beat until blended. Add the eggs one at a time, beating after each addition. Stir in vanilla. Sift together the flour, baking soda, cinnamon, nutmeg and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Stir in the apples and pecans. Pour into pan and bake until a toothpick comes out clean, about 50 minutes.
To make the caramel sauce, melt the butter in a saucepan. Add the sugars and salt. Cook over medium- heat for about 2 minutes until sugars are dissolved and mixture starts to bubble. Add the Lamers Dairy Dairyland’s Best Heavy Whipping Cream. Boil for about 2 minutes, while stirring constantly. Let cool some. Poke holes in the cake and pour the warm sauce on top or pour over individual slices.
