Margarita Cupcakes With Lime Cream Cheese Frosting


This dessert is ideal for margarita lovers. It does really well as an anniversary, birthday, or baby-shower cake. And you can also make this delicious recipe as muffins, cupcakes (or cake) just adjust the cooking time accordingly. Creamy and refreshing – these margarita cupcakes with lime cream cheese frosting is one of the most delicious and unique treats!

Servings 12 

Ingredients:

  • 1 (18.25 ounce) package white cake mix
  • 1 can frozen margarita mix, thawed
  • 3 egg whites
  • 1 tablespoon grated lime peel
  • 2 tablespoons sunflower oil (or any other vegetable oil)
  • 1 tablespoon lime juice
  • 1/2 cup unsalted butter, softened
  • 1 (8 ounces) package cream cheese, softened
  • 1 tablespoon lime juice
  • 1 tablespoon grated lemon peel
  • 5 cups confectioners’ sugar

 

Instructions:

  • Preheat oven to 350°F/180 °C/Gas Mark 4. Lightly flour a 9×13-inch cake pan.
  • In a large mixing bowl, beat together the cake mix, frozen margarita mix, egg whites, lime zest, vegetable oil, and 1 tablespoon lime juice. Put the batter into the prepared pan.
  • Then, bake in the preheated oven till a toothpick inserted into the middle shows moist crumbs, around 30-35 minutes. The cake will be moist. When you are done – cool in the pot.

To make the frosting:

  • Beat the butter and cream cheese together until fluffy and light, and stir in 1 tablespoon lime juice and the lemon peel. Beat in the confectioners’ sugar, 1 cup at a time, scraping the sides of the bowl methodically with a spatula after every addition. In the end, spread the frosting over the cake.
