Honey Ginger Garlic Salmon

- 5 teaspoons minced garlic
- 2 teaspoons ginger
- 4 Tablespoons coconut aminos or soy sauce
- 4 Tablespoons Honey
- 4 Salmon Filets
Directions:
- 1.Whisk together garlic, ginger, coconut aminos and honey.
- 2. Line a baking sheet with parchment paper. Place Salmon on the baking sheet and spoon the dressing mixture over each piece.
- 3.Bake at 425 degrees for 12 minutes or until salmon flakes with a fork.
Quick & Easy Quinoa and Veggie Salad
- 2 packages precooked quinoa/corn blend
- 1/2 cup diced bell peppers, variety of colors
- 1 cucumber, seeded and diced
- 1/2 cup shredded carrots
- 3 teaspoons garlic
- 1 teaspoon ginger
- 2 Tablespoons soy sauce
- 2 Tablespoons honey
- 1/4 to 1/2 cup olive oil

- 1.In a large bowl combine the garlic, ginger, soy sauce, honey, & olive oil.
- 2.Whisk until all combined.
- 3.Add in the quinoa and veggies and stir until combined.
- 4.Best served chilled.
