Pancakes, pasta and other popular eats are making a comeback at a familiar dining locale in Lehigh County.

Coplay Eatery, offering casual American fare for breakfast, lunch and dinner, is expected to open in about a month at 1214 Chestnut St. in Coplay, co-owner Patrick Sibri said.

The renovated corner property previously housed other restaurants, including Tony’s Family Restaurant and Paulie’s Family Restaurant, the latter of which closed in 2020 after more than a decade of business.

“We’re just waiting on some kitchen equipment, and then we have to train the staff,” said Sibri, who’s operating the eatery with his business partner, James Gibbons.

The restaurant, with seating for around 120 customers, will offer a variety of fresh, made-to-order dishes, including burgers, cheesesteaks, soups, salads and chicken, steak and seafood platters. There also will be Greek, Italian and other international specialties.

Breakfast items, including French toast, omelettes and eggs Benedict, will be available all day, and a new espresso machine will brew specialty coffees.

“We’re also going to have a small menu of Mexican food — items like tacos, burritos, fajitas, chalupas and chimichangas,” Sibri added.

Sibri, of Bethlehem, has more than 15 years of culinary experience, including stints as a chef at other Lehigh Valley area restaurants.

Along with a team of contractors, he’s renovating the Coplay building to include new kitchen equipment, flooring, lighting, ceiling tiles, granite countertops, wall paint, windows and more.

Also, the property’s parking lot was recently repaved, and new carpeting will be installed in the restaurant’s dining room in the coming weeks.
