Red-Eye’s Git-N-Messy Smokehouse to open at Henry’s Depot, Chuck Cobb tribute wall planned

The late Chuck Cobb had high hopes for expanding his burgeoning empire at Red-Eye’s Git-N-Messy Smokehouse & Tavern. His partners are putting the concept to the test in the fall with a stall at Sanford food hall Henry’s Depot.

“Our plan is to open in early October following some renovations,” partner Chris Poulos told the Sentinel.

It’ll be a limited menu at first, he says, one that focuses on the proteins.

“Pulled pork, brisket, ribs and most of the sides — mac, beans, slaw — along with smoked wings, Bavarian pretzels and Chuck’s famous cheese sauce.”

More items will be added as they settle into the space.

Henry’s Depot owner Sean Kelley, had many talks with Cobb over the years, “even back when he was doing sushi,” but the timing never worked out. “There weren’t any open spots.”

When Git-N-Messy serves its first plate, it’ll be in an all-new location in the Depot.

“We have an extra space there that’s been ready to go as a restaurant but we kept it as seating just to see how things went,” Kelley explains. Things are going well and Kelley’s ready to fill it.

“Git-N-Messy will tbe a brand-new addition and we’re very excited because the barbecue aspect will be a very good fit with what we already have and these guys are definitely the right guys to do it.

Poulos says they’re looking to franchise down the road.

“This is the prototype for the franchisable concept that Chuck and I were talking about months ago.”

A tribute wall for Cobb figures prominently in the plans, he says.
