Tortillas

Ingredients:

  • 1 1/2 cup flour or gluten-free all-purpose baking flour
  • 1/2 tsp salt
  • 1 tbsp oil
  • 1 cup water

In a large bowl mix flour, salt and oil. Slowly add in water. Knead into a dough. Make into 1-inch balls. Roll out into a circle then Cook in a pan on medium heat. Flip tortillas 3 times every 20 seconds until they puff up and remove from pan.


Jalapeño Cabbage

Ingredients:

  • 1/2 head of cabbage finely chopped
  • 1/2 cup diced jalapeño
  • 1 tbsp minced garlic
  • 2 tbsp oregano
  • 1 tsp salt
  • 1/4 cup juice from jalapeño
  • Mix all ingredients together


Habanero Cream Sauce

Ingredients:

  • 3 habanero, seeded, stemmed, and finely minced (use 1 habanero for less spiciness)
  • 1 cup sour cream
  • 2 teaspoon garlic, minced
  • 1/2 tsp onion powder
  • 2 tsp olive oil
  • Pinch of Salt and Pepper
  • 1 tbsp lemon juice

Place oil in a small pan on medium heat, and add minced habanero and garlic. Saute for 5 minutes. Let cool. Combine pepper mixture, sour cream, lemon juice and place in blender. Add onion powder and a pinch of salt & pepper to the cream. Blend well.

Serve or store in the fridge for up to 1 week.

Tilapia

Ingredients:

  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 tablespoon minced garlic
  • 1 lime zested and juiced
  • 1/2 teaspoon coarse kosher salt
  • 4 tilapia fillets
  • 1 tablespoon olive oil


Rinse fish fillets. Sprinkle seasoning on both sides of the tilapia and pan-fry using oil on medium heat. Sprinkle minced garlic over the fish. Cook for 4 minutes on each side. Finish by covering it with lime juice and zest.
