Update: Owner Marc Devlin said Thursday afternoon that the opening would be Saturday instead.

Bar Torino, the latest project from restaurateur Marc Devlin, is officially opening Saturday.

The upscale Italian eatery at 56 N. Third St. in Easton has been hosting soft openings throughout the week.

“Word is spreading,” Devlin said Thursday. “We’re ready to get going and we’re ready to open.”

Bar Torino — and its neighboring space, a bottle shop dedicated to an eclectic mix of natural, organic and sustainable wines and liquors — was originally set to open in January , but the restaurant was only recently able to obtain a liquor license. Bar Torino, the main restaurant, will open first, with the adjacent bottle shop hopefully opening in a few weeks, Devlin said. The two-part spot is housed within The Seville, a $19 million apartment complex that opened last year.

The restaurant, whose name derives from the northern city of Turin in Italy, strives to break any notions customers may have about Italian food, with what Devlin described as a menu featuring small bites, pizzas and charcuterie that are Italian at heart, but upscale.

“We’re not trying to be pigeonholed into being an Italian place,” Devlin said.

That means a menu that will hook diners with Italian dishes they recognize with an unexpected verve. At the center of the menu will be uniquely charred pizza made with a specially made Pavesi rotating pizza oven. Devlin, who has over 25 years of experience in the wine business, has curated a selection of natural and sustainable wines, in addition to artisanal beers and cocktails with locally made liquor.

Bar Torino will be initially open for dinner only 4-9:30 p.m. Tuesday through Thursday, and until 12 a.m. Fridays and Saturdays.
