Pan Roasted Duck Breast
Caesar Dressing
Ingredients:
- 4 anchovies
- 2-3 garlic cloves
- 1 teaspoon Dijon mustard
- 1 egg yolk
- Juice of one medium size lemon
- 1/3 cup neutral oil
- 1/4 cup parmesan finely grated
- Salt and pepper to taste
Directions:
- Using a large knife mince anchovies and garlic together then using the flat side of the knife mash the mixture together and scrape against the cutting board until both ingredients develop a paste texture.
- In a medium-sized bowl whisk egg yolk with the garlic anchovy paste, mustard and lemon juice.
- Once the ingredients are well mixed together, begin whisking the mixture while slowly drizzling in the neutral oil.
- When all of the oil has been slowly whisked in, the dressing should be delicately thick with a creamy consistency.
- Once the consistency has been achieved, whisk in parmesan and season to taste.
