Caramel Crunch–Chocolate Chunklet Cookies

These not-your-average chocolate chunk cookies boast big caramel flavor—but there’s no caramel in the ingredient list. Instead, the sugar and butter in these slice-and-bake one-bowl cookies brown in the oven for a deeply sweet, nutty, caramelly flavor, and the cookies are baked in muffin tins for extra toasty, crisp edges. If walnuts aren’t your thing, feel free to substitute with more chopped chocolate. From Baking with Dorie: Sweet, Salty & Simple by Dorie Greenspan, out now.

Homemade Jammie Dodgers

Make the United Kingdom's favourite cookie at home, using your prefered flavour of jam. These iconic shortbread cookies are filled with jam and a thin layer of buttercream. I have heard of Jammie Dodgers before, but never really knew what they were. I was happily surprised to see that they are a VERY popular cookie in the U.K. They remind me of cookies my Mom use to make when we were little, so I knew I wanted to try a homemade version since they aren't readily available here in Canada.

Foodie Favorite: Vanilla Cupcakes with Caramel Buttercream Frosting

Amateur baker and lover of all things food, Carlson enjoys finding new recipes and learning techniques to perfect his love and appreciation for whole foods. This past weekend we celebrated my son’s 7th birthday. He asked for a three-layer cake, and vanilla cupcakes. I found this awesome recipe for ultra vanilla cupcakes that turned out awesome. For the frosting, I went with spiced caramel buttercream. I find that when you have such a bold frosting, a simple vehicle for delivering that frosting is best … though, these cupcakes are anything but simple.

Christmas Cocoa Cookies are traditional so called “Ausstechplätzchen” (you make a short crust dough and cut out the cookies) that are very easy to make. Germany is famous for its Christmas cookies. It is a German tradition to bake before Christmas and serve the cookies on December 24 which is in Germany the “Heilige Abend” (the holy night). That’s the evening when the “Christkind” brings the gifts for everybody. And of course all cookies are nicely placed on a plate together with marzipan potatoes and more. Happy Baking!

Chef Jamie Gwen shares sweet treats to celebrate spooky season

Chef Jamie Gwen offers Halloween dessert ideas that are “scary good.”. Line a 9-by-13-inch baking dish with foil. Spray with cooking spray. Divide the marshmallows evenly between two large microwave-safe bowls. Divide the butter between the two bowls. Microwave one bowl until the marshmallows begin to melt, about 45 seconds. Stir well and microwave again until completely melted, about 30 seconds more. Add gel food coloring and stir to turn the marshmallow mixture an even, vibrant color. Add half the rice cereal and stir to coat completely. Repeat the melting process with the second bowl of marshmallows and butter, tint with another color and mix in the cereal.
