Daniel Boulud makes his post-Covid NYC comeback with new restaurant Le Pavillon

One Vanderbilt Ave (corner of East 42nd St) Open Wednesday through Saturday for dinner only (breakfast and lunch will be available starting in the fall) “I had to relearn everything.” Like many restaurateurs, Daniel Boulud has had a tough 2020. Several restaurants in his group, Dinex, including db Bistro and some Boulud grocery stores, are still closed (but expected to reopen) and he’s had to drastically cut his staff. “From 750 before the pandemic, we went down to about 10. Since then, we’ve gone back up to more than 300,” he says. After 9/11, the drop in activity lasted a week, but nothing prevented New Yorkers from meeting up. This was of course not the case with Covid.

There’s someone new helming the kitchen at Café Boulud Palm Beach, the first restaurant famous French chef Daniel Boulud ever opened outside of New York City. Chef Dieter Samijn replaces Rick Mace, who left to open Tropical Smokehouse in West Palm Beach. Samijn was plucked from Boulud’s Manhattan French bistro Bar Boulud on the Upper West Side, where he has been executive chef for two years.

Daniel Boulud Hosts Virtual Cooking Classes to Benefit Citymeals on Wheels. If you’re ready to take your pandemic cooking to the next level, Daniel Boulud is here to teach. The renowned chef is hosting virtual cooking classes for January (starting today) during which he’ll walk participants through cooking four dishes: steak tartare, poulet basquaise, trout grenobloise, and salade Lyonnaise. The four ticketed classes start at $200 for a shopping list, recipe and Zoom link — just slightly less expensive than the prixe-fixe menu at Daniel. (For $625, those located within a 2-mile radius of the Upper East Side restaurant can get a box delivered with all the items on the list prepped and ready to cook.) Classes are around an hour and include time for a post-cooking question-and-answer session. Boulud, who’s copresident of Citymeals on Wheels, will donate 10 percent of class sales to the nonprofit.
