An Insider’s Guide to Visiting Fredericksburg

Seventy miles northwest of San Antonio and 175 years ago, German settlers established Friedrichsburg in honor of Prince Frederick of Prussia. Times have changed and so has the name, but people continue to be drawn to modern-day Fredericksburg for its old-world charm. The town’s population has increased steadily over the years, now hovering at around 11,000, and its share of tourism has only grown as it’s gained national attention as the wine capital of Texas. Still, plenty of the state’s best-kept secrets remain in Fredericksburg, especially around the holidays. The majority of guests flock to the area in the spring and fall, according to data from the Fredericksburg Convention and Visitor Bureau, with only 14 percent visiting during the winter. With cooler temps, fewer crowds and plenty of festive happenings, this is the perfect time to seek out your own piece of Hill Country heaven.

A dish with an ‘attractive presentation’

When my mother made this dish, it was always set next to my father’s place at the table. Obviously, Mama was showcasing that it was intended for him. When he saw what my mother had prepared, his demeanor lightened, and he appeared to become lost in the days of his youth along the shores of the Bodensee (Lake Constance, Germany). There were no herring swimming in that freshwater lake, of course, but he must have relished herring for the first 26 years of his life when he lived there.
