    Hey Bagel will open in Seattle's University Village this fall

    Hey Bagel , a rising juggernaut in Seattle's bagel scene, plans to open its first brick-and-mortar store in November.

    Why it matters: Once Hey Bagel's shop opens at University Village, you'll no longer have to pre-order weeks in advance to score some of Seattle's best bagels.


    Catch up quick: Hey Bagel is a project of Andrew Rubinstein, the founder of Rubinstein Bagels, who sold his stake in that local mini-chain last year.

    • He told Axios that he launched Hey Bagel because he "wanted to create a different bagel from what we were doing" at Rubinstein.
    • His vision for the U Village location is that people will be able to walk in and get hot bagels that are browned, blistered and "might even have some burn marks on them."

    Dig in: The dozen bagels I picked up from Hey Bagel's pre-order drop in Capitol Hill earlier this month fueled Axios Seattle's reporting for days.

    • You want a slight crunch when you bite into a fresh bagel. These achieve that without being too dry, chewy or dense.
    • The blistering on the outside, crackling exterior and soft interior had me in bagel heaven.

    Thought bubble: My bagel world was shaken when Little Market , one of my top picks for bagels in the city, closed earlier this year.

    • Hey Bagel, even in its limited pre-order and pop-up form, has gone a long way toward filling the bagel-shaped hole in my heart.

    The bottom line: You can expect a crowd when the U Village shop opens this fall.
